Sunday Carnivore Activites

Plenty of time to cook a proper meal today, so I actually made two. I had everything on hand to bake mahi mahi, plus added some cilantro lime rice and an avocado half. I don’t eat a ton of rice, but when I do, I prepare it as a side dish and make enough to go with my next meal. Not a strict carnivore item, but only about 40 net carbs. No harm, no foul.

Once I was done eating, I prepped some protein meatballs for later (minus a few for testing purposes). I saw this recipe on the YouTube Channel by Laura Spath. She and her husband have lost hundreds of pounds using the Carnivore diet. She shares pretty much everything about her journey.

I made a few modifications to the recipe, based on what I had available:

  • 1-1/3 pounds of grass-few beef, from a cow named Oswald

  • 8oz of precooked bacon pieces

  • 2 eggs

  • 1/2 cup of almond flour

  • 1 cup shredded Mexican cheeses

  • pepper

This was enough to make 20 meatballs, about 30g each in weight. The whole assembly process took about 10 minutes. I cooked five in my air fryer, set at 390 degrees. After turning them once, they were crispy after 10 minutes of cooking time. I think next time I’ll set the fryer a bit lower.

These are currently in the freezer getting cold cold colder - enough for 3 freezer bags.

i’m calling this recipe a success. The only ingredient I don’t usually have on hand is the precooked bacon pieces. I used half of what the recipe called for, which seemed to taste about right. I now have a lifetime supply of almond flour, which I substituted in for Laura’s pork rinds (powder). I’ve never bought pork rinds - not about to start now.
